Sabbie made her senior debut around 2015, the same year she was part of the England side that claimed a memorable European gold on home soil. She suffered a serious knee injury that kept her out of the game for 18 months, returning during the 2018 Champions Trophy and immediately showing the quality that had first earned her international recognition.
She went on to make a number of appearances for Great Britain during the FIH Hockey Pro League, producing impressive displays against the Netherlands and Belgium in late 2020, and was a reserve as GB won Olympic bronze at Tokyo 2020. A key member of the Surbiton side that has dominated the women's domestic game, she appeared in six of England's games in the 2021–22 FIH Pro League.
That form carried into a jam-packed summer in 2022: Sabbie made her long-awaited World Cup debut for England in the Netherlands and Spain, and helped the side win a historic first Commonwealth Games gold on home soil in Birmingham that August. She continued as a senior option through the 2022–23 and 2023–24 FIH Pro League seasons, played in the 2023 EuroHockey Championships in Mönchengladbach, and was part of Great Britain's Olympic qualification campaign for Paris 2024. She has remained part of the senior goalkeeping pool through the 2024–25 Pro League and into the 2026 World Cup cycle.
